Early on we learned some valuable lessons about working with foodservice professionals. They're passionate about the food. They love their equipment, but don't want to think about it too much. And they can get a little intense when their gear breaks down. What's a baker going to do when his oven goes on the fritz at four in the morning? Run to SA for muffins to sell?
From those early formative experiences we learned three critical business principles:
1. Sell extremely reliable foodservice equipment at a fair price
2. Be available when your customers need you—no matter how early or late

True, those early years were largely an exercise in sleep deprivation and caffeine addiction—and our pants always smelled like bread—but we made it.
