Horizon client Lu's Sandwiches is rapidly approaching their July 8th opening day for their new shop in Northeast Minneapolis. The location, their second in Minneapolis, follows on the heels of their succesful location on 26th and Nicollet on Minneapolis' famed Eat Street.

Their Northeast location is slated to serve their beloved bahn mi sandwiches, noodle bowls, rice bowls, egg rolls and spring rolls. If you're ready for your shot at glory, for twenty bucks you can take Lu's giant bahn mi challenge, where a two-foot, three-and-a-half pound sandwich has your name on it and will get your picture on the wall if you finish it.

According to The Journal, Owner Quang Pham said while much of the beloved food will stay the same, the business model will be of a higher-end fast casual restaurant serving beer, wine and made-to-order food.

Sounds like winning combination to us.
