The heat and humidity of summer - and the hottest time is now - puts stress on walk-in coolers and freezers. Take care of them so they will take care of you and your patrons, who expect fresh food.

Take steps to keep your walk-ins running efficiently and reduce the chance of a breakdown. Efficiency not only reduces strain on the units, it reduces the draw you will see on your power bill, can extend their life, and of course ensures your valuable perishables are kept fresh.

Keep air flowing by cleaning the grill and condenser coil. Check gaskets to ensure they are whole and pliable so they keep the contents airtight.

Now that you've attended to the mechanicals, clean the interior. Cooling efficiency is affected if fans are blocked or contents are packed too tightly.

In addition, check the intended hold temp for each unit. If you run it colder than recommended, it will run and run in an attempt to match the setting -- which often leads to premature breakdown. If you have a temperature indicator of the interior mounted on the outside, make sure it's calibrated with reality on the inside.
